Banana Pancakes!

As it is Pancake Day (or Shrove Tuesday to be more technical) I thought it would be rude not to upload at least one pancake recipe! So here is my take on banana pancakes!

As it is Pancake Day (or Shrove Tuesday to be more technical) I thought it would be rude not to upload at least one pancake recipe! So here is my take on banana pancakes! They are incredibly easy to make, great source of energy and can be garnished however you like – although I do recommend blueberries and peanut butter (or maybe some Nutella for a cheeky treat).

Serves 1/2 – I personally find this too much for a solo portion but do halve it if you want to create your own personal size pancake!

Cooking time: 10 minutes

Ingredients

  • 2 Bananas
  • 2 Eggs
  • 1/2 tsp Baking Powder
  • Handful of Blueberries
  • Handful of Raspberries
  • 2 spoons of Peanut Butter
  • Knob of Butter

Method

Heat the butter in a non-stick frying pan on a medium/high heat.

Meanwhile, mash the bananas in a bowl using a fork, before adding the two eggs. Whisk it all together and then add the baking powder, whisking one a final time.

Pour the mixture into the pan (if you are using a large pan, either use little holders to create mini pancakes or you will have to separate the pancake into quarters before flipping – banana pancakes don’t hold as well as the standard ones due to the weight of the banana!)

Cook until the pancake is golden brown and then carefully flip and cook briefly on the other side, until a similar colour.

Serve your pancakes accordingly, spooning on a generous dollop of peanut butter, followed by a scattering of blueberries and raspberries!
