These have become one of our go to recipes. Kale is so good for you and has numerous health benefits but due to its strong flavour, some people tend to struggle eating it and I can sometimes find it a little overwhelming if there is too much on my plate! However, these super simple and easy Kale Crisps make eating kale an absolute dream and are the perfect addition to salads and stir fries; eaten alongside meat or fish; and even just eaten as a tasty snack! Feel free to add your own blend of spices or just have them plain, whatever suits your taste buds on the day!
Serves: 4 – 6 people
Bag of Kale / Whole Kale
3 – 4 tbsp Olive Oil
Juice of Half a Lemon
1tsp Chilli Powder (or 1/2 a tsp if you aren’t a big spice fan!)
Salt and Pepper
Preheat the oven to 180 degrees. Give the kale a good wash and dry before tipping into a large bowl. If you are using whole kale leaves, then slice them into strips of about 3cm in length (they will shrink once they start cooking). Add the oil, lemon juice, cumin and chilli powder and mix into the kale, ensuring all the pieces of kale are coated. Season with salt and pepper to taste before tipping onto a baking tray. Place in the oven and cook for around 20 minutes, or until the kale is crisp and crunchy. Be careful to keep an eye on it as it will suddenly go – I have ended up with blacker kale crisps than anticipated on more than one occasion!
If you can’t get your hands on any kale then this recipe also works really well with summer, spring and winter greens. I also like to change the spicing depending on my mood, so sometimes will use paprika rather than chilli and cumin. Mix it up and try new things!
